Yield stress value as an input in Non- Newtonian simulation

Currently I am working on simulating debris flow as a Non- Newtonian flow. The material properties that I have include: Friction angle, density , particles size and cohesion. I am trying to find a way to determine the yield stress value, as it is required in the XML file for the simulation.
For estimating the yield stress as an input in my simulation , I would appreciate any suggestions. ( We do not have test data for shear stress-shear rate).
similarly, to find appropriate values of m and n in HBP model , I am seeking guidance on the recommended method .
